Results - Effects of Lye on Maize Varieties



 













Different varieties of maize have different responses to lye treatment.  Ten replicates of each maize variety were boiled 30 minutes in lye, and control samples were boiled 30 minutes in water:

In dent corn the yield of grits was significantly greater for the lye treatment than for water. 
(t¹ = 3.12, df = 12.02, p = .009)

In flour corn the yield of grits was less for the lye treatment than for water, though the difference was not significant.
